Roman gnocchi were very different from those we know today, they were mainly made of flour and water and cooked in broth or on the grill. During the Roman Empire , dumplings were a common food for soldiers and peasants as they were easy to prepare and store. Over time, gnocchi has evolved and each country has developed its own version and tradition, for example in Italy potato gnocchi is particularly popular. They are particularly popular and have also been adopted in South and Central America.

Wine pairing

Food-wine pairing is a complex art, which evaluates many factors such as the acidity, sweetness, taste, aroma, structure and alcohol content of the wine. In general, a crisp and flavorful white wine, such as Pinot Grigio , Sauvignon Blanc , or Vermentino , is recommended for spicy potato gnocchi. These wines have a freshness and sweetness that contrast well with the softness of the gnocchi and the spiciness of the sauce. Alternatively, you can choose a fresh and fruity rose such as Bardolino Chiaretto or Rosa di Syrah.
Also, when it comes to red wine, a light, fruity wine like Barbera , Merlot , or Pinot Noir can be a great choice to accompany this recipe. These wines have a light structure and a fruity aroma that matches the taste of spicy sauces and marries perfectly with the softness of potato gnocchi. Another option could be a sparkling red wine, such as Lambrusco or Bardolino Novello , whose effervescence helps free the palate from hot sauces and offers a pleasant gustatory experience.

In general, the choice of wine depends on personal taste and the taste of the diner. The most important thing is to choose the right wine for the dish and make the taste pleasant."

Enjoy your meal! :)
