Carbonara pasta, original recipe

Pasta carbonara is a classic Italian pasta dish made with eggs, bacon, and grated pecorino romano cheese. Here is the basic recipe for pasta carbonara:

Ingredients:

200 g of spaghetti or fusilli or penne
4 large eggs
1/2 cup of grated Pecorino Romano
1/2 cup diced bacon
Salt and pepper to taste

Preparation:
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
Meanwhile, beat the eggs in a large bowl and mix with the grated pecorino. To put aside.
In a separate skillet, cook the bacon over medium heat until crispy.
When the pasta is cooked, drain it and transfer it to the pan with the bacon.
Turn off the stove and pour the egg and cheese mixture over the pasta and stir to coat.
Salt and pepper to taste.
Serve the pasta immediately, garnishing it with more grated pecorino if desired.
Note: It is important to add the egg and cheese mixture to the pasta while it is still hot, so that the eggs cook and thicken without scrambled.
