Saffron risotto

Risotto alla Milanese is a traditional Milanese dish made with Carnaroli rice, saffron and beef broth.

Ingredients:

1 1/2 cups Carnaroli rice
2 tablespoons of butter

4-5 cups of beef broth

1/2 cup grated Parmigiano Reggiano
Salt and pepper to taste

Preparation:

Melt the butter in a large saucepan over medium heat. Add the onion and saute until soft and translucent, about 5 minutes.

Add the rice to the pan and stir until coated in the butter and onion.

Pour in the white wine and cook until it is absorbed by the rice, about 2 to 3 minutes.

Begin adding the beef broth , 1 cup at a time, stirring constantly. Wait until each cup of broth has been absorbed before adding the next. This process should take around 20-25 minutes.

While the risotto is cooking, dissolve the saffron threads in a little hot water.

Once all of the broth has been added and the rice is cooked to the desired consistency, stir in the saffron water and Parmesan. Season with salt and pepper to taste.

Serve the risotto hot , garnished with more Parmesan if desired.
