Pasta al Sugo al Barolo

Traditional Barolo sauce

Barolo sauce is a traditional Italian sauce made with Barolo wine and tomatoes.

Here is a recipe to try at home:

Ingredients:

1/2 cup of Barolo wine
1 can of 800 g (28 oz) of whole peeled tomatoes
1 onion, diced
4 minced garlic cloves
1 tablespoon of tomato paste
1/2 cup beef or chicken broth
1/4 cup chopped fresh basil
2 tablespoons of olive oil
Salt and pepper to taste

Instructions:

Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and saute until the onion is translucent, about 5 minutes.
Add the tomato paste and mix.
Pour in the Barolo wine and boil for 5 minutes to let the alcohol evaporate.
Add the canned tomatoes and their juice, breaking up the tomatoes with a wooden spoon.
Pour in the broth and bring the sauce to a boil.
Let the sauce simmer for about 20 minutes, or until it thickens and the flavors are blended.
Add the chopped basil and season with salt and pepper.
Serve the Barolo sauce on your favorite pasta, preferably long pasta such as tagliatelle or pappardelle and enjoy your meal!
