Winemaking and ageing: The grapes are hung in single bunches for 4 to 5 months in rooms where a chimney is lit from time to time for smoking. This is followed by a three-stage pressing for a total of 15 hours from which we obtain three choices, the must is cooled for 5 days to decant the coarse lees, then, almost limpid, it is sent into fermentation. At the end of this phase it is transferred to 112-litre demi-barrels drained to allow oxidation where it matures for 36 months. Then, unfiltered, it is prepared and bottled.
