This is a product in which the terroir of the Massa Trabaria, of the Vadesi hills with a southern exposure, is at its best, bringing these red grapes, adapted to the territory, the same as the truffle in terms of composition, to ripen at the end of October, beginning of November.
Low yields per vine, harvesting in several stages, different grape varieties united in fermentation (the farmer's wine), maximum care in the cellar, no filtering... there are no secrets to making Álvaro... only great passion.
Winemaking and ageing: The red grapes of several varieties (including 2 old French vines that came to us in the 1920s) are derasped and fermented for 5 days at a low temperature, then placed on the fermenters where they undergo natural fermentation for about 3 weeks, racking and placing in barriques used to avoid too much wood. At least 12 months on fine lees then cold decanting and bottling without filtration.
Wines: Colorino, Alicante, unknown grapes.
Colour: Ruby red with purple highlights.
B bouquet: Intense, complex, original.
Flavour: Dry, very particular and balanced, persistent.
Serving: Wide goblets at 18° best opened in advance.
Pairings: Grilled meats, roasts and game, game sausages.
