It is the wine of tradition, in every peasant family Vino Santo was produced, obtained by selecting the best bunches of grapes from the vineyard that were hung in the large kitchens, places where the fireplace was always lit in winter, bunches that tied with string were attached to nails on the wooden passages in the ceilings. The smoke and heat from the fireplace dried the grapes and in Holy Week they were piled up.
Put into the cellar, it underwent continuous fermentation over the years and was tapped as it was needed.
This was the most important wine and was only served on the best occasions: the birth of a child and the bottle of its vintage was put away to be drunk at his wedding; opened when the 100 quintals of grain were being threshed; on the occasion of visits by important people; as a gift to the curate or doctor.
From this history, from this tradition, with improved management in the vineyard, with the care and selection of the grapes, with oenological methods careful not to alter, but to improve the management of the final result... ANGELICUS was born.
Winemaking and ageing: Antico Trebbiano grapes from the sparse berry variety are hung in single bunches for 4 to 5 months in rooms where a fireplace is lit from time to time for smoking. This is followed by manual selection of the berries and a three-stage pressing for a total of 15 hours from which we obtain three choices, the must is cooled for 5 days to decant the coarse lees, then, almost limpid, it is sent to fermentation. At the end of this phase, it is transferred to drained 112-litre demibarrique where it matures for 36 months. Then, unfiltered, it is prepared and bottled.

Colour: Deep golden yellow.
B bouquet: From honey to ripe fruit, from floral to pleasantly smoky.
Flavour: Sweet, balanced, persistent.
Serving: On medium-sized goblets at 14°c.
Pairings: All pastries, fruit pies, tarts, blue cheeses..
