VARIETY: Barbera 100%
COLOR: clear, bright ruby red with violet and purple reflections
SCENT: elegant, intense fruity notes, especially cherry and black cherry among the red fruits are the most common, subtle spicy and vinous note
TASTE: dry, fresh and well balanced. Warm, full-bodied and vinous.
GRADATION: 14 % vol
AGING: after alcoholic and malolactic fermentation it is aged for a year in steel and then bottled
PAIRINGS: excellent with first courses of meat, rice and soups, red, braised or grilled meats and full-fat and aged cheeses. To be served at room temperature
VINIFICATION: Guyot pruning, harvest end of September beginning of October. Destemming, alcoholic fermentation in cement, maceration for 10-12 days, malolactic fermentation and storage in steel
NB: Barbera d'Alba Superiore follows the same type of vinification but is obtained from the must and undergoes a passage of one year in oak barrels. The perfume tends more to spicy, vanilla, floral with a noticeably greater complexity.
