In all its versions, Nebbiolo has a common thread: elegance. The important tannic structure, deep, very fine and spicy aromas combine to create a bouquet that is sometimes important and austere, other times fresh and fragrant.
For Nebbiolo d'Alba, a minimum ageing period of one year, of which at least six months in wood, is obligatory and necessary.

Vinification: fermentation in steel, ageing for 18 months in large oak casks
Colour: ruby red with orange reflections, brilliant just right for the type of wine.
Bouquet: warm, enveloping, heady, complex. Aromatic and balsamic notes in the opening followed and supported by woody scents, vanilla, cloves, cinnamon with a citrus finish. Fine and persistent.
Taste: full and voluminous, warm and soft. Smooth but still fresh tannins and good acidity are excellent prerequisites for further bottle ageing. Leather, precious woods, spices return with a bitterish finish typical of Nebbiolo. Great structure and finesse, perfect taste-olfactory balance.
Pairings: important, elaborate main courses, grilled meat, blue cheeses, special and daring pairing with chocolate.
