VINIFICATION
after crushing, and a soft pressing, the must is placed in steel tanks, where it is cooled to a temperature of about 15 degrees and the fermentation starts, without adding selected yeasts, the fermentation goes on for about a month, always at controlled temperature, to preserve the aromatic heritage
REFINING
in steel barrels, always at a controlled temperature, for about 8-10 months of production

ORGANOLEPTIC CHARACTERISTICS
Color: intense yellow
aromas: aromatic intensity typical of the grape, very spicy, rosemary, sage, mint
flavor: fresh and intense, with marked sapidity, hints of white-fleshed fruit, peach, pineapple

it goes well with rather elaborate fish dishes, white meat first courses, aperitifs and aged cheeses
