VINIFICATION TECHNIQUE:
Alcoholic fermentation in stainless steel tanks at a controlled temperature between 28-30°C, to keep its extraordinary aromatic complexity intact and increase the wine's tannic structure, through pumping over and delestage. Malolactic fermentation in stainless steel, to naturally stabilise the wine.
AGING:
The wine is placed in large French and Slavonian oak barrels, where it matures for at least 24 months and 12 months in bottle.
ORGANOLEPTIC CHARACTERISTICS:
Colour: intense ruby red tending to garnet
Taste: dry, warm, velvety, highly complex .
Bouquet: noble and austere with exuberant notes of spices, liquorice and leather.
SERVING METHOD AND TEMPERATURE:
We recommend serving the wine in a "Baloon" type goblet at a temperature between 18-20°C.
GASTRONOMIC MATCHES: We recommend pairing it with first courses, meats and mature cheeses.
