During the drying of the grapes at home, some berries in the bunch are attacked by a grey mould that causes the grape to dry out almost completely and gives the wine very special and much appreciated bouquets and flavours.
Berry selection is very careful to avoid harmful mould and eliminate it.
This is not an easy wine to obtain, but its olfactory sensations, its being soft and velvety on the palate, its great balance and its particular taste make it a great meditation wine.
GIUAN...Giovanni...I wanted to remember my father with the name of a wine because it was from him that I learnt the taste for small things made with passion...in fact, this muffato is incredible because it is made from grapes that were once discarded and that when you go to press them amaze you with their yield, 7-8 litres for every hundred kilos of fresh grapes.
A gem of a wine that passion has transformed into a product of great personality that reflects the winery's desire to amaze those who taste its sweet nectars.
Winemaking and Maturation: The grapes hung in single bunches undergo four to five months of evolution in rooms where a fireplace is lit from time to time for smoking. Some of these or single berries of the bunches are, in certain years and under particular conditions attacked by grey mould, which in the manual selection of the berries are separated and vinified separately with a maximum yield of 10% fresh grapes. The result is a unique nectar that processes in 110-litre demi-barrels for 60 months before reaching its peak. Then unfiltered, it is bottled.
Grape: Antico Trebbiano.
Colour: Deep amber.
Bouquet: Intense, complex, of yellow fruit, ripe jam, notes of spices.
Flavour: Sweet, pleasantly, balanced, persistent.
Serving: On medium-sized glasses at 14°.
Pairings: Exceptional on its own, dry pastries, fruit tarts, cheeses.
