The press is filled with about 1000 kg of whole grapes. The grape/wine yield is 55%. During pressing, the cuvee (35%), premier taille (15%) and deuxiéme taille (5%) are obtained (and then vinified separately).
Fermentation with selected yeasts. Barbera in barrique, Nebbiolo and Pinot Noir in stainless steel
In the spring following the harvest, the cuvee is assembled, sugar and yeast are added and the wine is bottled. In the bottle the sparkling wine ferments slowly for 2-3 months; ageing lasts for at least 24 months
Tasting notes
Rose' feminine and elegant. Fine and persistent perlage. Notes of cherry, ginger and candied orange peel. Fresh with acidity balanced by good minerality with creamy, toasty notes.
