It is our most representative production, Offida Pecorino must have a minimum of evolution to express its full potential. It proves to be a white wine of character with a distinctive and traditional bouquet, good body and high acid content. The result is a pleasantly intense wine with floral hints of ripe yellow fruit and a straw-yellow colour with greenish reflections. The flavour makes it unique: fresh, balanced and pleasantly savoury. Its harmonious complexity makes it suitable for accompanying fish first courses, adapting to a thousand other occasions.
Variety of Grapes: Pecorino (100%) Growing area: Offida Type of soil: Clayey Planting system: Guyot Vendemmia: Early September, manual harvest with careful selection of grapes. Luva is delicately placed on crates. Winemaking: Cryomaceration of the skins for 18/24 hours at 5°C to extract the maximum aromas. Soft pressing of the crushed grapes and controlled fermentation at 15°C of the must. Once fermentation is complete, pumping over is carried out on the fine lees to enhance the bouquet. Refining: Steel and bottle Colour: Straw yellow with greenish reflections Bouquet: Intense, elegant with floral hints, ripe yellow fruit Flavour: Fresh, soft, balanced with lingering aftertaste.
