Harvesting takes place at the end of September with perfectly ripe and carefully selected grapes.
ripe and carefully selected. The whole grapes are kept in the press for 5 hours at a temperature of 15°C then a soft pressing is carried out followed by cold static decantation. Alcoholic fermentation is conducted at 18°C in steel containers. The wine is then stirred on the fine lees for a few months before being filtered and prepared for bottling.
