TERRE DI PISA SAN GIOVESE D.O.C.

GRAPE VARIETIES: San giovese

SOIL: Sandy (85%), with presence of clay (10%) and silt (5%), light-coloured, medium deep.

PLANTING DENSITY: 4,200 plants per hectare.

TRAINING SYSTEM: spurred cordon trellised at 90 cm.

YIELD PER HECTARE: 50 quintals.

PRODUCTION TECHNIQUE

The grapes are harvested by hand and placed in the classic "bigonce" and then transferred into a special trailer to be transported to the winery. After careful sorting, they are destemmed and crushed. This is followed by a maceration of 13 to 15 days, depending on the vintage, with frequent pumping over at a temperature of 28 °C.

Malolactic fermentation takes place in steel tanks.

Maturation in tonneaux followed by further ageing for 6 months in the bottle.

Bottles produced: 4,000 per vintage.

TASTING NOTES

Intense ruby red colour.

The bouquet presents fruity and berry aromas that blend with fine spicy hints. Dry but soft on the palate, warm and full-bodied with a pleasant tannic note.
