Caluso Passito DOC is the most typical wine of Caluso. The fame of this 'oenological gem of the green Canavese' is the result of the scrupulous and passionate dedication, handed down and refined over the centuries, of drying the Erbaluce grapes on wooden mats.
With it, starting with four quintals of selected grapes, it is possible to obtain, at the end of the ageing process, about one hectolitre of wine. As soon as they are ripe, they are harvested and placed in wide baskets and taken to the drying rooms, where they are laid out on mats. This marks the start of the drying process, which will continue until mid-February. With it, concentrations of over 30% sugar are reached. Once the drying process is complete, the grapes are vinified normally and pressed. This is followed by a slow fermentation phase in 350-litre oak barrels, lasting several months. Ageing for a further four years, five for the Riserva, will give the wine its final characteristics. Thus begins its life, because Caluso Passito offers satisfaction to the palate even after many years, some decades.
The taster recognises in this wine the essences of peach, orange, bergamot, tobacco perfume, honey, dried fig, acacia, cyclamen and toasted hazelnut. Pairing with dry desserts, but above all a meditation wine.
