Erbaluce di Caluso' DOC wine is the best known of the wines produced in our area. It is a dry white wine bearing the name of the municipality of Caluso, combined with the name of the grape variety.
These grapes are harvested in small, low crates so as not to compress it during transport. Taken to the cellar, the grapes are destemmed and then softly crushed. High technology makes it possible to obtain musts free of solids and of impeccable quality.
Temperature-controlled fermentation follows, in stainless steel tanks, with inoculation of indigenous yeasts. Maturation of several months on their own yeasts will allow their partial lysis with considerable enhancement and development of primary aromas. The aim is to obtain a product of high structural richness with the least amount of human manipulation.
