After the grapes have been destemmed, fermentation takes place at a controlled temperature of 26-28°C, with about 8-10 days' maceration on the skins. Racking off takes place when alcoholic fermentation is complete. Malolactic fermentation and ageing are carried out entirely in steel. Bottling is planned for late summer, bottle ageing lasts about 6 months.

Taste: Delicate structure with a fine acidity, with notes of small red fruits
Pairing:
Goes well with Valle d'Aosta chopping boards and with not too elaborate main courses.
