Grapes from highly suitable vineyards of the Calabrian variety.
Vinification and maturation: Soft pressing of the grapes, after brief contact with the skins, and fermentation at a controlled temperature (17° - 18° C.) The grapes, cultivated as small trees on terraces, are harvested surmature, in the cooler districts and younger vineyards. After soft pressing of the grapes, the must ferments at a controlled temperature. The resulting wine is put on the market after at least two months of bottle ageing.
Organoleptic characteristics: Brilliant antique gold colour with distinct topaz reflections. Intense and harmonious bouquet, complex and decidedly muscat-like, with distinct hints of apricot. Full, soft flavour with hints of acacia honey and pleasant background of dried figs, apricot and sultanas.
Recommended pairing: Ideal with desserts, fresh and dried fruit. Splendid with spicy cheeses.
