Production area: hilly areas of Pelago in the Chianti Rufina area. Clayey, marly and calcareous soils overlooking the Arno valley east of Florence.
Exposure : south.
Altitude : 200/350 m asl
Grapes : Sangiovese.
Training system : spurred cordon.
Grape harvest : from 20 September to mid-October.
Vinification : fermentation of the grapes for 10 days in thermoregulated steel vats (26/28°C). Racking and then malolactic fermentation, always in steel. After fermentation, the wine passes into wooden barrels.
Maturation : 6 months in wood and 6 months in steel.
Possibility of aging : 10/15 years.
Visual aspect : ruby red.
Perfume : fresh and floral scents.
Taste : wine of great structure capable of combining longevity and softness, good gustatory harmony and excellent drinkability, gentle on the palate.
Accompaniments : it adapts well to both light foods and elaborate dishes.
