Production area: hilly areas of Pelago in the Chianti Rufina area. Clayey, marly and calcareous soils overlooking the Arno valley east of Florence.

Altitude : 200/350 m asl
Grapes : Sangiovese (40%), Merlot (60%).
Training system : spurred cordon.
Grape harvest : first half of September.
Vinification : fermentation of the grapes for 10 days in thermoregulated steel vats (19/20°C).
Maturation : 3 months in steel and sparkling with the Charmat method.
Possibility of aging : 3 years.
Visual aspect : pale pink, with excellent clarity.
Perfume : notes of tropical fruit, citrus, peach and bouquet of white flowers.
Taste : fine bubbles, tropical fruit and a good final acidity are found.
Accompaniments : pleasantly accompanies delicate appetizers, but also cheeses and cold cuts. It can also be paired with seafood dishes, shellfish, fish soups and white meats.
