This great wine was produced to celebrate the centenary of the birth of FRANCO RICCARDI Olympic Sword Champion 1928 , 1932, 1936 and founder of the Nectar of Saints Company.
Grapes:
Merlot 80%, Cabernet Sauvignon 20% .
Training system: guyot - density: 4,500 vines / hectare
Vinification:
Once the grapes have reached excellent ripeness, they are selected and collected in small boxes (about 5kg.). Transported to the cellar, they are placed in a room suitable for drying where they remain for about three months. In December they are gently de-stemmed. The classic fermentation in red takes place in steel vats of 70 hl., Where with targeted and repeated pumping over the skins are brought into contact with the must-wine for at least fifteen days in order to displace all the characteristics (color, aromas, tannin ) present in dried grapes in the future wine.
Aging takes place for about six months in barrique and then in small steel tanks.
