Vinification:
Once they have reached a good degree of ripeness, the grapes are harvested by hand in small baskets, taken by harvest carts to the winery where they are destemmed. The classic and traditional red fermentation takes place in 130 hl tanks. The crushed grapes are fermented for 5-6 days at a temperature of 26-28°C; targeted pumping over brings the skins into contact with the wine must. Before bottling, the wine is enriched with a cheerful effervescence obtained by natural re-fermentation in an autoclave.
