Vinification:
Reached a right ripeness, the grapes are harvested manually in small baskets, transported with harvest wagons to the cellar, delicately de-stemmed. The classic fermentation in red takes place in 150 hl. Steel vats, equipped with technologies that enhance the choices linked to tradition and which are supported by a careful knowledge of the transformation processes to move all the characteristics (color, aromas, tannin .. ) present in healthy and well-ripened grapes in the future wine. These technologies make it possible to carry out targeted pumping over, through flooding in a protected environment, repeatedly bringing the skins into contact with the must-wine for at least ten days.
