A fine, refined creation of the Triacca house. A rigorous selection of dried grapes for Sforzato, perfectly ripened on the steep slopes of the former La Gatta monastery. Unlike our traditional Sforzato San Domenico, Il Monastero is aged for 12 to 15 months in small new barrels of fine oak in the ancient vaulted cellars of the La Gatta estate. Due to its great concentration and structure, the wine is able to absorb the aromas of the wood while maintaining its own character and distinctiveness. The Monastery therefore shows a brilliant ruby color; the aromatic aspect varies from raspberry, violet and ripe plum to tobacco and chocolate; on the palate complex, concentrated, strong character but still delicate; acidity in good balance with ripe tannin, pleasant wood notes, great persistence.

VINIFICATION: Drying of the grapes in fruit lofts for 60-70 days. Maceration on the skins for 15-17 days in 130 hl stainless steel fermenters with automatic plungers. Three "racks and return" at a controlled temperature of 29°C.
