"Sublime wine": this great Valtellina specialty is the ultimate expression of the typical flavors of Valtellina. Carefully selected grapes are harvested in crates and stowed to dry in fruit lofts throughout the the autumn period. Only in mid-December, after approx. two months, are they pressed. During this period a noticeable concentration of sugars and aromas takes place. Fermentation takes place very slowly, both because of the low cellar temperatures and the high sugar concentration. The resulting wine is very full-bodied, very rich in extracts and anthocyanins, with abundant of soft, round tannins. The bouquet has notes of toasted almonds while the palate has the pleasant aroma of raisins. Sforzato is a product of particular importance to the Valtellina wine economy.

VINIFICATION: Drying of the grapes in fruit lofts for 60-70 days. Maceration on the skins for 15-17 days in 130 hl stainless steel fermenters with automatic plungers. "Three rack and return" at a controlled temperature of 29°C.
AGING: Obtained in large and small oak barrels for 18 months.
