Vinification: Once the right ripeness has been reached, the grapes, having different ripening times, are harvested separately. After harvesting, which is carried out strictly by hand, the grapes are placed in small baskets, tipped into harvesting carts and transported to the cellar where they are gently destemmed. A soft pressing with pneumatic presses separates the must from the marc, which is then fermented, at a controlled temperature of 18°, in steel tanks; a skilful blending produces this elegant wine.
