Vinification:
Once they have reached the right ripeness, the grapes are harvested by hand into small baskets, transported by harvest carts to the winery, and destemmed gently. The classic red wine fermentation takes place in 150 hl steel winemakers equipped with technologies that enhance choices linked to tradition, supported by a careful knowledge of the transformation processes to move all the characteristics (colour, aromas, tannin..) present in healthy, well-ripened grapes into the future wine, technologies that allow targeted repassing through flooding in a protected environment by repeatedly bringing the skins into contact with the must-wine for at least 5-6 days.
